Blueberry Syrup Puree
- 1 cup cane sugar
- 1 cup water
- 18 oz fresh blueberries, rinsed
- 2 tsp vanilla extract
Blueberry Mint Lemonade
- 3–4 lemons, juiced
- 1/2 cup Blueberry Syrup Puree, from above
- 3 cup water
- 12 mint leaves (about 1/2 cup of mint leaves)
- 3/4 cup cane sugar, or desired taste
Instructions
- Start by preparing a blueberry syrup puree. In a saucepan, combine equal parts water and sugar with blueberries and vanilla extract. Bring the mixture to a simmer, occasionally mashing the blueberries to release their juices.
- After 20 minutes, let the syrup cool and strain the blueberries. For a thicker syrup, press the berry mixture though the sieve (or strainer). This process will leave you with a flavorful base for your lemonade.
- Next, grab the fresh lemons and juice them. Then, add the lemon juice to a pitcher with room-temperature water, mint leaves, sugar, and the blueberry syrup puree, adjusting the sweetness and tartness to your liking. The room temperature water helps the sugar to dissolve well.
- Stir until fully incorporated, and refrigerate the lemonade overnight, or pour the blueberry mint lemonade over ice.
