- 5 whole eggs
- 1 cup cottage cheese
- 1 cup sweet peppers, chopped
- 3 cups baby spinach, chopped
- 4 slices lower-sodium turkey bacon, cooked and chopped
- Salt and pepper to taste (or 1/4 teaspoon favorite all-purpose seasoning)
Instructions
- Preheat your oven to 350°F.
- In a blender, crack 5 eggs and add the cottage cheese. Blend until smooth. (If using an immersion blender, combine eggs and cottage cheese in a large glass bowl and blend until smooth.)
- Add chopped sweet peppers, baby spinach, turkey bacon (or meat alternative), and seasonings. Stir with a wooden spoon until fully incorporated.
- Line a quarter-sized sheet pan (9×13 inches) with parchment paper.
- Pour the egg mixture into the sheet pan and spread evenly.
- Bake for 23–25 minutes, or until eggs are fully set.
- Let cool slightly before slicing and serving.
