Description

Easy sheet—pan eggs are a high-protein, vegetable-loaded, efficient breakfast—perfect for busy mornings! They include turkey bacon, cottage cheese, and vegetarian swaps.


Ingredients

  • 5 whole eggs
  • 1 cup cottage cheese
  • 1 cup sweet peppers, chopped
  • 3 cups baby spinach, chopped
  • 4 slices lower-sodium turkey bacon, cooked and chopped
  • Salt and pepper to taste (or 1/4 teaspoon favorite all-purpose seasoning)

Instructions

  1. Preheat your oven to 350°F.
  2. In a blender, crack 5 eggs and add the cottage cheese. Blend until smooth. (If using an immersion blender, combine eggs and cottage cheese in a large glass bowl and blend until smooth.)
  3. Add chopped sweet peppers, baby spinach, turkey bacon (or meat alternative), and seasonings. Stir with a wooden spoon until fully incorporated.
  4. Line a quarter-sized sheet pan (9×13 inches) with parchment paper.
  5. Pour the egg mixture into the sheet pan and spread evenly.
  6. Bake for 23–25 minutes, or until eggs are fully set.
  7. Let cool slightly before slicing and serving.
